As April rolls into May and my garden begins to awaken, I find myself longing to be outside soaking up the sunshine and enjoying all the signs of spring.  Today would have been a great day to do just that if it hadn't been snowing!  Our volatile Colorado weather can change our plans drastically and unexpectedly.

 

I am reminded that life, in general, can also change drastically and unexpectedly.  That's why PPN exists.  Not only can we get great buys on food items for everyday use, but we can stock up as a hedge against the unexpected downturns in life.

 

Thank you to each of you who are part of this network and part of making it all work.  I am constantly amazed at the range of knowledge within our ranks, and I feel very blessed to be amongst such a great group and to learn from each of you.

 Walton Feed Delivery Day Info 

The Walton Feed Shipment comes in May 13th. For planning purposes, pick up will ONLY be between 3:00-4:30 p.m. at Covenant Presbyterian Church, 2845 Parliament Dr. in Briargate.

Thanks to the many who have already volunteered! We could still use a few more men. Please let me know if you can help by emailing me at mailto:rosaliamc@aol.com?subject=Walton Feed delivery day volunteer.  Volunteers, please plan on arriving by 7:00 a.m. and working through mid-afternoon. Lunch and snacks will be provided.

More information will be sent directly to volunteers and members with orders.

Growing Pains  

Thank you to each of you who replied to our request about whether or not you would order in the fall and how much you would order if the opportunity were available.

 

Many of you expressed a desire to volunteer to help make that opportunity possible.  Thank you so much!  I do believe that in the future we may be able to offer a fall Walton Feed delivery.  However, at this time there isn't enough demand to fill a truck in the fall.

 

The good news is that next spring we will expand to two trucks if the demand is great enough and if we get the volunteer support to pull it off.  We don't yet have enough volunteers to fully support one truck this spring.  It is cheaper and takes fewer people to support one delivery with two trucks than to support two separate deliveries (we only rent a forklift once, etc.).  This will be our next step before going to two deliveries a year.

Tip of the Month  

Did you know that most fluorescent lights are considered hazardous waste?  What are you supposed to do with them if you can't put them in the trash?

What about the used motor oil from the lawn mower?

OK, we've been told that computers are hazardous waste, but what do we do with our old junkers?

Are batteries OK to trash?

Did you know you can get unlimited supplies of free mulch from the county?

Recipe of the Month   

 
Quinoa Salad with Grapes

 

1-3/4 c water

1 Tbsp olive oil

1/2 tsp sea salt

1 c quinoa (rinse if necessary in a strainer before using)

Bring water, oil, and salt to a boil in a saucepan.  Stir in the quinoa, cover and turn temperature to medium-low.  Cook for 15-20 minutes until done.  Cool or refrigerate until cool.  Fluff the quinoa in a large bowl and add:

1 c cashews, halved

1 c seedless grapes, halved

1/2 medium red onion, finely chopped

3 Tbsp chopped fresh basil or 1/2 tsp dry basil

1 tsp lemon grass, optional

1/2 c chopped cooked chicken, optional

 

Toss will a raspberry vinaigrette or a homemade vinaigrette dressing.  Arrange on crisp lettuce.  Garnish with avocado slices.
